Happy St. Patrick's Day

May your blessings outnumber
The shamrocks that grow,
And may trouble avoid you
Wherever you go.

Love the leprechaun,Lys..Happy Patrick's Day to all of you...hope this recipe formats in legible fashion. I probably should have done this as a new post.

Molly Maguire’s Irish Soda Bread

Stir together in a large bowl:
3 cups flour
¼ cup of sugar
1 ½ tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt

Add to flour mixture and mix just until moistened:
¼ cup vegetable oil
1 ½ cups buttermilk
½ cup golden raisins
2 tsp. caraway seeds (optional)

Shape dough into mound on lightly greased cookie sheet.
Lightly sprinkle top with flour.
Cut a deep cross in the top with a sharp knife (to let the spirits escape as it bakes).
Bake for 50 minutes at 350◦ degrees.
