Molly Maguire’s Irish Soda Bread
Stir together in a large bowl: 3 cups flour ¼ cup of sugar 1 ½ tsp. baking soda 1 tsp. cream of tartar 1 tsp. salt
Add to flour mixture and mix just until moistened: ¼ cup vegetable oil 1 ½ cups buttermilk ½ cup golden raisins 2 tsp. caraway seeds (optional)
Shape dough into mound on lightly greased cookie sheet. Lightly sprinkle top with flour. Cut a deep cross in the top with a sharp knife (to let the spirits escape as it bakes). Bake for 50 minutes at 350◦ degrees.
